Mexican Breakfast Tacos

This is our favorite morning meal at the campground.  It is simple, easy, and requires very little clean up.

What you will need:

  • Chorizo
  • Eggs
  • Sliced Tomato
  • Corn or flour tortillas (soft)
  • Shredded Cheese
  • Hot peppers: cayenne, jalapenos (optional) or salsa
  • Avocado

Cooking Instructions:

Fry the chorizo in a pan for several minutes.  Add eggs, cooking chorizo and eggs together.  Once complete, add mixture to the tortilla.  Complete with cheese, peppers or salsa, and avocad0.

Note: This is a versatile meal.  Add the toppings that compliment your family.  This is an easy alternative to cereal or a fast food meal.


Camp Fire Jalapeno Poppers

Camping is synonymous with food, right?  We love quick and easy appetizers and they are a tried and true crowd pleaser.  There are few ingredients and can be cooked directly over the fire or on the grill.

What you will need:

  • Bacon
  • Whole Jalapenos
  • Cream Cheese
  • Toothpicks (optional)
  • Dry Rub Seasoning (optional)
  • Gloves (please use gloves, peppers can be very harsh)

Cooking Instructions:

Heat grill or start fire.  Set aside cream cheese, allowing it to become room temperature.  Put on gloves and cut the jalapenos in half, remove the core and ensuring that you are removing all seeds.  Once the inside of of the jalapenos is cleaned out, fill with cream cheese.  Sprinkle with dry rub (optional).  Slice bacon and wrap around each jalapeno half.  Secure the popper with a toothpick (optional).  Place on a cooking pan and cook until bacon is crisp.

Note: We do not remove all seeds because we like the heat (spiciness) of the pepper. If you do NOT like spicy, then make sure you remove all seeds.

Over The Top Chili

Who loves a good tailgate?!?  We do, we do! 

This chili will is an award winner with our camping family.  Not only is it adult and kid-friendly, you won't spend all day slaving over the stove.

What you will need:

  • Chorizo
  • Turkey Meat
  • Hamburger Meat
  • Chili Beans
  • Rotel or salsa
  • Onion (white)
  • Salt and pepper to season

Cooking Instructions:

Set grill to 250 degrees. 

  • Combine chorizo, turkey and hamburger meat in a large bowl. 
  • Season with salt and pepper to taste.  Add other seasoning (optional)
  • Ensure that you mix all spices together with meat , making a large ball or meatloaf shape. 
  • Gently place dutch oven on heat source, keeping space between heat source, put grid on top of dutch oven then put formed me at on grid.
  • Cook approximately 2/3 hrs while stirring beans about every 30 mins.
  • Once meat looks cooked through or temps at 160,  pull all items off of heat.
  • Crumble the meat into beans and stir.
  • Serve with corn chips, sour cream, or shredded cheese.

Notes: Do not use really lean meat. You will want the meat that you use for this recipe to generate "grease" drippings.
